Pumpkin Spice Bliss Ball Recipe (Healthy and Vegan!)

This recipe is a delicious Fall treat, naturally vegan and healthy! Perfect for making adorable pumpkin-shaped bliss balls, these little truffles are perfect for a healthy snack or fun Fall festivities!

Ingredients (makes about 5-6 pumpkins)
- 1/4 cup almond butter
- 2 tbsp pumpkin puree
- 1/4 cup oat flour
- 1/4 cup almond flour
- 1 tbsp honey
- 2 tbsp coconut sugar
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice (add more to taste!)
- 1/2 tsp vanilla
- Pinch of salt
- + chocolate chips to garnish
- Cinnamon sugar:
- 2 tbsp granulated cane sugar
- 1 tsp cinnamon
- Add almond butter, pumpkin puree, honey, coconut sugar, and vanilla to bowl and mix well
- Add oat flour, almond flour, pinch of salt, and spices to taste (we preferred a stronger pumpkin pie flavor so we added a little more cinnamon and spice!)
- Mix well until you achieve a play-do like consistency. If dough is too dry, you can add one tbsp of oat flour at a time until you reach a moldable consistency
- Roll dough into 1" balls - if dough is too soft, you can refrigerate it for 10-20 minutes. However, we found the dough easy to work with without refrigeration!
- Using your My Little Cakepop Pumpkin Cake Pop Mold, place balls into mold and squeeze out excess dough. Pat down air hole on bottom of mold for a smooth and uniform appearance
- Carefully open your Pumpkin Cake Pop Mold and remove your adorable pumpkin truffle!
- Evenly roll in cinnamon sugar mixture
- Top immediately with a chocolate chip for the stem!
Will keep at room temperature for 3 days or in the fridge for up to a week.
